Cured ham

Esta receta va para todos aquellos que les guste el jamon crudo, tengan un sotano (basement) fresco y sin humedad. Aca va la receta de mis abuelos:

INGREDIENTES:

1 jamon fresco de cualquier tama~o S al gruesa. Pueden usar la ice cream salt. Cuidado de no usar la sal que se usa para derretir hielo o nieve en las veredas. pimenton picante. Si no consiguen pimenton picante, mezclen el pimenton dulce (paprika) con pimienta de cayena. aceite de oliva arpillera o cheese cloth

PREPARACION:

Enterrar el jamon en la sal gruesa durante unos treinta dias. Poner algo pesado encima (algun tipo de enciclopedia o libros de fabulas).Alguna caja de carton o madera de las dimensiones apropiadas servira para el entierro. Despues de los treinta dias limpiar bien el jamon de toda sal. Pueden usar un cepillo (nada de agua). Dejar reposar, con el hueso hacia arriba, durante unos 10 dias. Mezclar el aceite con el pimenton(lots of it) y enbardunar bien el jamon(cubrir bien toda la superficie del jamon para evitar que se rancie). Cubrirlo con el cheese cloth y luego colgar en un lugar fresco, seco y oscuro durante unos tres meses o mas. La mejor epoca del a~o para preparar el jamon es a me- diados del oto~
